Vinny, you asked and you shall receive!!

Grilled Chicken Breasts with Spicy Peach Glaze


What better combination for chicken than sweet and spice? You can increase or decrease the heat in this recipe according to your preference.

INGREDIENTS:
6 chicken breasts, boneless and skinless(works good w/boneless thighs)
1 cup peach preserves
1/4 cup green chiles, minced (if I don't have chiles, I use couple dashes of dried pepper flakes)*
2 tablespoons cider vinegar
1 clove garlic, minced
1/2 teaspoon fresh ginger, grated (or 1/8 teaspoon dried)*
salt

PREPARATION:
Preheat grill for medium heat. Combine all ingredients except chicken breasts, in a bowl. Season chicken lightly with salt and place on the grill. Cook for 25 minutes, basting with peach glaze in the last 15 minutes of cooking.


* (Don't get anal about the ingredients just as long as the ingredients are going to give you the final taste. That's what's so much fun about cooking.....get creative!)

I saw a chef on TV this morning making grilled lamb kebabs that were marinated in yogurt. Now I HAVE to get to the store to buy some leg of lamb for kebabs!

Vinny...that's very typical for Greek kabobs. That's what makes the kabobs so tender and juicy. I've done it with chicken kabobs, too! Yummy!!!thumbs up

Tonight was Tilapia breaded iwth Italian style bread crumbs and baked on the BBQ in some canola oil..YUM! Basmati Brown rice on the side!
